December Daily: Christmas Cookies

We're getting ready to make Christmas cookies to send to the boys. We're mailing their boxes Monday in hopes that they'll get there right on time for opening Christmas Day! This is the first time we've mailed to them with a deadline, so we'll see how it goes. The USPS website says Monday is the last day for Christmas delivery via Priority Mail. And can I say just how much I love love love Click N Ship??? It has come in handy for shipping personal packages as well as helping out a customer when she needs quick shipping. I will never stand in line at the post office again if I can help it! And neither will my husband; he will take the boys' packages already paid-for and labeled and just hand them to a clerk . . . without having to stand in a ginormous line. At least I hope it works that way on Monday! ;)

Now. Cookies! I've always enjoyed making Christmas cookies. Our favorite is Chocolate Crinkles: soft, chewy brownie inside with a crinkly surface outside reminding one of snow. This is one of the cookies we're sending; the rest have yet to be determined!




Chocolate Crinkles
Taken from our trusty old Better Homes and Gardens Cookbook

3 beaten eggs
1 1/2 cups sugar
4 squares (4 ounces) unsweetened chocolate, melted
1/2 cup cooking oil
2 teaspoons baking powder
2 teaspoons vanilla
2 cups all-purpose flour
Sifted powdered sugar

Oven 375 degrees

In a mixing bowl combine beaten eggs, sugar, melted chocolate, cooking oil, baking powder, and vanilla. Gradually add flour to chocolate mixture, stirring till thoroughly combined. Cover and chill for 1 to 2 hours or till easy to handle.

Shape dough into 1-inch balls. Roll balls in powdered sugar to coat generously. Place 1 inch apart on an ungreased cookie sheet. Bake in a 375-degree oven for 8 to 10 minutes or till edges are set and tops are crackled. Cook cookies on a wire rack. If desired, sprinkle with additional  powdered sugar. Makes about 48.

    About the shipping, I totally agree. Click-n-ship is a good friend of mine too. ;O) Isn't it so convenient to be able to just drop something in the mailbox (assuming it's small enough) and know it's going out? LOVE it!

  2. I haven't tried Click-N-Ship before but it sounds great. Do you have to weigh the package at home? My scales aren't that accurate.

    I haven't had chocolate crinkles for ages, They sure sound good.

  3. I printed out your recipe. I want to try making in Splenda so it is sugar free and diabetic friendly. It sounds yummy. :) Snow here in VA. :) But won't be able to get out to go to the churches Christmas program. :( Oh well...
