Pancakes

Have you ever tried the Harvest Grain & Nut pancakes at IHOP? I love them, so I looked online for a copycat recipe. There were lots of them out there, but this one from Allrecipes is the one I settled on. I've made it a couple of times now, and it's a keeper. I hope you like it too!

I choose to use a whole-grain recipe because of my diabetes. The whole grains, while they will raise your blood sugar, raise the blood sugar more slowly than refined white flour. So if I eat just one, with some peanut butter on it for protein, my blood sugar is very manageable. That's a healthy thing for non-diabetics too, so I feed them to my whole family. I've been making whole-wheat pancakes for so long now that my husband doesn't like those pasty little white ones any more! ;) He loves them thick and hearty.

  1. I agree with your husband... I like the whole wheat ones..I have never tried peanut butter on them though... but i love peanut butter... so that is my next thing...thanks for the suggestion,

  4. We're still eating the pasty ones. haha! But we do ONLY eat whole wheat waffles. The recipe we use is at foodnetwork(dot)com. Search Alton Brown Basic Waffle. It is hands-down the best waffle I've ever had. I promise you, you will love them. In fact, I think we'll have them tomorrow for breakfast!

  6. Mimi, we had never tried peanut butter until we were raising our support to come to Canada. One family we stayed with had pb on their pancakes, and we were hooked!

    Tammy, you have to try them - they are SO good!

    Phyllis, I haven't tried whole grain pasta in a while. The first ones we tried tasted grainy to me, but hopefully they've gotten better. I do need to try them again, as pasta is one of those things that sends my blood sugar up really fast.

    Elizabeth (first one!), I'll have to look up that recipe . . . and get a waffle iron. I keep hinting to my kids that a waffle iron makes a great gift - and my b-day is coming up! ;)

    The other Elizabeth - I hope you can try these - they are really great!

  7. Those sound yummy. We like IHOP so I bet my hubby would like those. We'll have to try that next time we go there.

    Hope this isn't too off topic but wanted to let you guys know that they are having a missions conference at our church this week. And the guest preacher preaching at it is Glen Browder the IFB Baptist preacher. He tells it like it is. Services were Sun 11 moning & nite with a dinner & are also Mon Tues & Wed nites at 7 pm with a dinner Wed nite. It's at Rivers Edge Bible Church (Presbyterian) in Prince George/Hopewell, Va. I figured there might be a few of you who might be interested since an IFB is preaching...

    Btw, IHOP has good pancakes... :)

  8. I've been trying to cut back on a lot of white flour and sneak in more whole wheat/grains. For a while, I've been making whole wheat pancakes, and we really enjoy them, but this sounds like a great new recipe to try! Thanks for the link! :~)
